Spinach Artichoke Dip Recipe

Registered dietitian Laurie Barker Jackman shares a tasty spinach dip recipe.

Ingredients:

1 cup plain Greek yogurt

1 cup cottage cheese

1/3 cup mayonnaise

1 14 oz can artichoke hearts, drained (squeezing out excess liquid)

6 cups fresh spinach

2 cloves garlic, chopped

¼ cup parmesan cheese, grated

1 cup marble cheese, grated

½ tsp onion powder

Pepper to taste

Directions:

1) Preheat oven to 375

2) Cook spinach in a frying pan with a little oil until wilted. Once cooled, squeeze out excess water, set aside

3) Blend yogurt and cottage cheese until smooth with a blender or food processor

4) Add mayo, artichoke, spinach, garlic, pulse until combined

5) Stir in parmesan, ¾ of the marble cheese, onion powder and pepper

6) Spread in an 8x8 dish, sprinkle with the remaining cheese

7) Bake for 20-25 minutes until bubbly and browning

8) Serve with veggie and pita chips
