Ingredients:
Salad Dressing
- 1 cup olive oil
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1 lemon juiced
- Salt and pepper
Chimichurri Sauce
- ½ cup olive oil
- 1 tsp red wine vinegar
- ½ cup parsley chopped
- 2 garlic cloves minced
- 1 chili diced
- 1 tsp dried oregano
- Salt and pepper to taste
Salad
- 2 cups leafy greens
- 1 cup grilled corn kernels
- 1 avocado sliced
- 1 cup cherry tomatoes sliced
- 1 cucumber chopped
- 1 shallot sliced and placed in vinegar
- 1 tbsp pumpkin seeds (optional)
- 1 cup feta cheese
- 1 steak of your choice cooked medium rare
Instructions
Make the salad dressing by combining 1 cup olive oil, 1 tsp Dijon mustard, 1 tsp honey or maple syrup, 1 lemon juiced, salt and pepper. Shake in a mason jar and set aside. Make the chimichurri sauce by combining ½ cup olive oil, 1 tsp red wine vinegar, ½ cup parsley chopped, 2 garlic cloves minced, 1 tsp chili flakes, 1 tsp dried oregano, and salt and pepper to taste. Mix in bowl and set aside.
Cook your steak to liking and set aside to rest.
In a large bowl, combine 2 cups leafy greens, 1 cup grilled corn kernels, 1 avocado sliced, 1 cup cherry tomatoes sliced, 1 cucumber chopped, 1 shallot sliced and placed in vinegar, and 1 tbsp pumpkin seeds (optional). Top with salad dressing and toss. Top with sliced steak, feta cheese, and chimichurri.
