London-based BBQ food truck ‘Meat Kandy’ has gained traction on social media for its carnival style eats. “I wanted to bring Texas style live fire BBQ to London,” said owner Steve Boyle. Boyle says the idea for Meat Kandy started after he received a life-changing diagnosis. “It started in 2019 right when COVID was hitting and I was actually diagnosed with cancer,” said Boyle. “I was working in construction and thought if I don’t wake up tomorrow my wife can’t do the job that I was doing, so I had to get out of that industry and open up something else.” Boyle is now cancer free. “I’m not conceited, I’m convinced,” said Boyle. “I’m doing something right because I’m undefeated.” Meat Kandy is most famously known for its ‘armadillo eggs,’ pork stuffed with cream cheese and jalapenos, pork belly cinnamon buns, pork belly brisket and apple pie baked beans.
